Blackford’s Tagine Genius

As part of our initiation / rite of passage with our new neighbours at Threesixty Architecture, Blackford’s executive chef Elaine Davidson and kitchen porter Tom Aldridge prepared a buffet lunch for the entire office recently.

It’s a brilliant element of the office culture at Threesixty that everyone takes turns to cook for their colleagues, so the team can sit and eat together away from the busy-ness of the working week.

We had a high bar to meet. So it was over to Elaine – by day an experienced insurance account executive; but give her a ladle and some pots and she could give some of the Great British Menu contestants a run for their money.

Elaine designed the menu (chicken and apricot tagine; beef meatballs with lemon and celeriac; baked rice with confit tomatoes and garlic; and roasted vegetable cous-cous salad with harissa dressing), while Tom enthusiastically shouted ‘yes chef’ and expertly salted some boiling water.

Thankfully everyone made it into work the next day, so it seems like we managed to pull it off. What a superb part of the office culture – a big thank you to Threesixty for trusting us with their stomachs.

Cheese sandwiches will never be the same again…
